Apple Pork Chops

This tasty dinner is a perfect way to celebrate fall in Virginia.

Ingredients:

  • 3 tbsp. of butter
  • 4 bone-in pork chops
  • 1/2 cup + 2 tbsp. of apple cider
  • 3 apples (any variety you prefer)
  • 1 tbsp. of Dijon mustard
  • 1 tsp. of chopped fresh sage

Directions:

Preheat your oven to 400 degrees.

In a large cast iron skillet, melt 1½ tbsp of butter over medium heat. Salt and pepper 4 bone-in pork chops and cook for about 6 minutes on each side to get a nice sear.

Add ½ a cup of apple cider to the skillet and place it in a 400-degree oven for 10–15 minutes.

While the pork is baking, core and thinly slice 3 apples. Cook the apples in 1½ tbsp of butter over medium-high heat for 5 minutes. Add 2 tbsp of apple cider and cook over high heat for 2 more minutes.

Place the pork chops on a plate. In the cast iron pan, whisk 1 tbsp of Dijon mustard and 1 tsp of chopped fresh sage into the remaining cider drippings. Place apples on top of the pork and drizzle with the sauce.
